Welcome to Latitude, the new gourmet getaway at the Hôtel des Grands Voyageurs since November 2025. Situated in the heart of the 6th arrondissement, this contemporary neo-brasserie celebrates a reimagined Parisian cuisine, open to the world and inspired by the richness of local ingredients and plant-based creations.
The chef and his team reinterpret the traditions of Parisian gastronomy, inviting flavors from afar to engage in dialogue with the local terroir and neighboring producers.
A true place of life and sharing, Latitude makes the heart of the Left Bank beat with events and gourmet gatherings.

Latitude seen by Benoit Ayissi
Executive chef of Hôtel des Grands Voyageurs since February 2024, Benoît Ayissi brings his personal vision of gastronomy to Latitude. With this new project, he offers much more than a menu: he gives a voice to a cuisine that reflects who he is — modern, generous, and curious about the world.
A teacher at heart, our chef places transmission and trust at the core of his philosophy. His team, involved at every stage of creation, collaborates with him to craft contemporary, free, and collective cuisine.
Before settling in at Saint-Germain-des-Prés, Benoît Ayissi honed his standards and eye within the Dalloyau group, which he joined in 2021 as Executive Chef. A journey rich in experiences and encounters, it shaped in him a passion for sharing knowledge, the precision of gestures, the accuracy of textures and cooking, and a constant desire to create cuisine that makes sense: human, sincere, and deeply rooted in it’s time.

Latitude's rendez-vous
At Latitude, friendliness is cultivated like an art of living throughout the week.
On Thursdays, the evening comes alive to the sound of Piano-Karaoke starting at 8:30 PM: a cozy moment where voices intertwine, laughter bursts out, and music brings people together.
On Saturdays, the atmosphere turns musical with a lively DJ set starting at 8:30 PM. Here, Paris becomes festive, vibrant, and utterly free — a table where the night tastes of celebration.
And on Sundays, from 12:30 PM to 3 PM, the pace slows down: brunch gently stretches out, generous and plant-based, true to the soul of the house — one of sharing, taste, and simplicity.
Each moment is an invitation to savor the present. Gourmet and festive gatherings, reflecting Latitude: lively, warm, and open to the world.
